Our roasting course is modular and divided into three parts. Each must be taken in sequence, and we recommend spacing them over several weeks for the best learning experience. Whether you're learning the basics, refining your home craft, or stepping into high-level production roasting, support is provided every step of the way..

Introduction to Roasting: Sample Roasting / Fundamentals
Cost: $400 pp
Duration: 3 hours
Aim: Build foundational knowledge and hands-on skills in roasting, focused on consistency, sensory understanding, and quality assessment.
What is covered?
1. Introduction to Coffee Roasting
- Coffee seed to cup: origins, processing, and how it affects roasting.
- Key roasting concepts: heat transfer (conduction, convection, radiation).
2. Roaster Familiarisation
- Sample roaster vs production roaster basics.
- Calibration, airflow, charge temp, and batch size.
3. Roasting Stages & Terminology
- Drying phase, Maillard reaction, caramelization, development.
- First crack, second crack, end of roast markers.
4. Sample Roasting Practice
- How to roast for green evaluation and cupping.
- Light, fast roasts with consistency focus.
- Cupping & Evaluation (1hr follow up session)
- Linking roast profile to sensory outcomes.
- Roast defects (baked, scorched, tipped, underdeveloped).
Outcome:
- Ability to roast and cup samples consistently
- Understanding roast curves, stages and sensory feedback
- Take home coffee to eventuate and return for follow up feedback.

Domestic / Hobby Roasting
Prerequisite: Sample Roasting & Fundamentals
Duration: 3 hours
Cost: $400 pp
Objective: Apply roasting principles to small-scale roasting, bridging from fundamentals to practical use at home or small setups.
Outline:
1. Domestic Roasting Equipment
- Home domestic roasters (drum roaster Aillio)
- Setup and safety
- Maintenance and cleaning
2. Applying Fundamentals to Small Batches
- Heat management and control on hobby roasters.
- Adjusting charge temps and roast times with small capacity.
3. Profile Development Basics
- Targeting sweetness, acidity, and body.
- How to replicate desired roast styles.
4. Practical Home Roasting
- Hands-on: light, medium, dark roast trials.
- Developing consistency with small equipment.
5. Storage & Brewing Impact
- Resting periods, degassing, and storage methods.
- Tying roast outcomes to brew methods (espresso vs filter).
Outcome:
• Ability to control and replicate roasts on domestic equipment.
• Clear understanding of how roast impacts flavour in the cup.

Production Roasting (Advanced)
Prerequisite: Domestic/Hobby Roasting
Duration: 3 Hours
Cost: $700 pp
Objective: Train in professional roasting for cafés, wholesale, or larger scale. Focus on efficiency, consistency, and advanced roast theory.
Outline:
1. Production Roaster Setup & Safety
- Commercial roaster mechanics (drum roaster Phantom).
2. Advanced Roast Profiling
- Rate of Rise (RoR) and development control.
- Curve analysis, logging software (Cropster, Artisan, Coffeesweet).
- Reproducibility across multiple batches.
3. Production Workflow
- Batch planning, green inventory management.
- Quality control at scale (cupping, physical analysis).
4. Consistency & Troubleshooting
- Managing environmental factors (humidity, ambient temp).
- Correcting roast defects under time/volume pressure.
5. Sustainability & Efficiency in Production
- Energy management
- Reducing waste, emissions, and maximising yields.
Outcome:
• Proficiency in operating commercial roasting equipment.
• Ability to design, execute, and replicate roast profiles for production.
• Confidence in quality control and efficiency in a professional roastery.
